How We Process Rice

THE WHOLE PRODUCTION PROCESS TAKES PLACE DIRECTLY IN THE COMPANY,

THE ROLLING IS OF THE TRADITIONAL TYPE WITH STONE

Our company transform the rice (rice in husk) into edible white rice through a bleaching process particular characterized by a revolving stone, which by rapidly rotating on itself whitens the rice previously dehulled (brown rice, without hulls) of grayish color, eliminating the aleuronic layer present only in brown rice.


This is one traditional processing which recreates the working methods of the first rice mills of the 1900s...
and keeps the organoleptic characteristics of the rice unchanged.
The result is a product of high class : elegant in appearance; healthy and genuine in flavour , and which, once cooked, will remind you of the flavors of the Italian rice tradition.

Our craftsmanship respects the grain by safeguarding its Bud (embryo), the fundamental fulcrum of rice life, and a very important part in terms of nutrition.

The whitening we perform is a delicate second degree abrasive treatment which allows the properties of the rice to remain unaltered.

An interesting but also very important detail in the working process of Crespi rice is the maintenance of the rice in special silos, in the period following the harvest and until the whitening takes place.


It is precisely here that the refinement of the caryopsis takes place which stabilizes in its integrity and increases the aggregating capacity of the starch, to then be processed and give life to that inimitable fragrance typical of our product.


All this takes place in the broadest respect for the environment, avoiding the addition of preservative agents as the silos are equipped with modern cooling systems which always keep the paddy rice at a constant temperature and humidity, essential for the correct maintenance of the cereal before of the processing.
