Pearled spelled
Triticum Spelta (Graminacee)
The pearled spelled (Triticum Spelta) that we offer is a semi-finished cereal that undergoes a dehulling or stripping process, through which the glumes and husks are eliminated and subsequently, through light husking with an emery stone, it is "pearlled" ensuring that the spelled takes on the typical shaded brown color.
Pearling spelled causes the loss of most of the fibers in favor of a notable reduction in cooking times (only about 20 minutes) compared to hulled spelled. Pearled spelled contains many vitamins (in particular A, B, C, E) and mineral salts (Magnesium, Iron, Calcium and Zinc).
Spelled contains gluten , which makes it an unsuitable food for celiacs.
HOW TO USE: it is prepared without soaking, it is advisable to rinse it under running water and then strain it through a sieve or colander before boiling it.
The pearled spelled must boil for approximately 20-25 minutes in salted water.
It can be cooked in four main ways:

simply boiled and drained, it is seasoned with hot oil, vegetables and/or spices

in the so-called "Farrotti", the same technique of preparing risotto with broth and sauté is applied, but using spelled instead of rice.

in hot or cold salads alone or mixed with brown rice or white rice or even with . pearled spelled

in soups or soups
