Barley (hordeum vulgare) is an ancient cereal, belonging to the grass family. Pearled barley contains little fiber because it has been subjected to the hulling and polishing process which gives it its "pealing" characteristic; compared to hulled barley it is much quicker to cook. Barley is a very energetic and easily digestible cereal, rich in vitamins and mineral salts such as magnesium, potassium, phosphorus, calcium and iron.
HOW TO USE: it is prepared without soaking, it is advisable to rinse it under running water and then strain it through a sieve or colander before boiling it.
Pearl barley should boil for about 20-25 minutes in salted water.
It can be cooked in four main ways:
simply boiled and drained, it is seasoned with hot oil, vegetables and/or spices
in the so-called "orzotti", the same technique as for preparing risotto with . . broth and sauté, but using barley instead of rice.
in hot or cold salads alone or mixed with brown rice or white rice or even with . pearled spelled
in soups or soups
